We freshly pick the needles from the Sitka Spruce (Picea sitchensis) trees to order and keep them on their sprigs, to ensure that they arrive with you totally fresh!

The fresh pine needles have a much higher potency and aroma than the dried needles.

The freshly cut sprigs can be frozen or kept in water to prolong their freshness.

Directions

To make fresh pine needle tea, you can use just a few needles for a weaker tasting tea, and a whole sprig for a stronger one.

  • Bring water to a boil.
  • Add pine needles (or whole sprigs) to water and reduce to the lowest heat. (approx 2 - 5 grams per cup depending on potency required)
  • Very low simmer for 20 minutes and remove from heat.
  • You can either leave to cool and drink or cover and let sit overnight to continue steeping.
  • Strain out pine needles, if required, sweeten to taste, then serve tea hot or cold.

Note: It's important to have a very low simmer and not to boil the pine needles in order to preserve the vitamin C.
