White Balsamic Vinegar - Organic and Biodynamic Certified - 250ml
This white balsamic vinegar is produced by the Guerzoni family on their organic and biodynamic certified farm in small high quality batches. They produce the only biodynamic certified balsamic vinegars available in the world.
This white balsamic vinegar is made with only organically grown Trebbiano grapes. It is produced from the cooked grape must that matures over the slow acidification derived from natural fermentation and progressive concentration in barrels of different woods, with no chemical or flavoring additives.
After prolonged boiling, made with the “open sky and direct fire” traditional method (mass production industry now use vacuum cooking that is much quicker, but leaves little flavour remaining in the grape must), the concentrated cooked must is removed from the boiler to be left to cool for at least 48 hours.
Then the liquid is filtered and checked for taste and quality. After a rest in a special iron tank, the grape must is added with a small quantity of wine vinegar to start the “acidification process”, then it is put into natuarl wood barrels to begin the refining process.
This white balsamic vinegar is ideal for everyday use on all kinds of foods.
