What is bee bread (perga)?

Bee bread, also called perga or ambrosia, is bee pollen that the bees have packed into the comb and left to ferment with honey and their own enzymes. That slow fermentation makes its nutrients more available to the body than fresh pollen, and gives it a tangy, complex flavour. It is one of the rarest and most treasured offerings of the hive.
