What does IGP certified balsamic vinegar mean?
IGP stands for Indicazione Geografica Protetta (Protected Geographical Indication), a European certification that guarantees the vinegar was produced in Modena, Italy, following specific regional standards. IGP balsamic vinegar of Modena must be made from a blend of cooked grape must and wine vinegar, aged in wooden barrels, and bottled within the designated region. What is the difference between IGP and DOP balsamic vinegar?
IGP and DOP are both protected certifications, but they differ in strictness and style. DOP (Denominazione di Origine Protetta) balsamic is made exclusively from cooked grape must with no wine vinegar, aged for a minimum of 12 years in a specific sequence of barrels.
