Our Organic Ceremonial Grade Matcha is sourced from green tea plants that grow semi-wild at high altitudes in the Yunnan-Guizhou Plateau. Situated in a remote mountainous region, these tea gardens experience pronounced temperature variations between day and night, resulting in a tea rich in nutrients and complex flavours. The cold nights of the plateau also limit the presence of pests and diseases, ensuring exceptional purity and quality.

Matcha is a finely ground tea powder created through the specialised low-temperature stone-ground milling of refined Tencha. Tencha are shade-grown tea leaves that, after harvesting, are steamed, then carefully dried, and broken down in a Tencha stove.

In the weeks leading up to harvest, the tea plants are intentionally shaded using a series of large tarpaulins to enhance their quality.

To adapt to the reduction of sunlight, the leaves significantly increase their production of chlorophyll and amino acids..

Towards the end of March, as the first tea bud and two delicate leaves emerge, tea farmers drape the garden with black netting. This shading process typically lasts a few weeks, depending on the movements of the weather. 

Once six to seven tea leaves have sprouted, the farmers proceed with harvesting. To preserve their freshness, the leaves are promptly tedded and processed immediately after picking.

The delicate tencha tea leaves must be processed within 24 hours. They undergo steaming, removal of stems and veins, and drying to produce the finished tencha dried tea leaf that is ready for the stone mills.

Our ceremonial matcha can be prepared using traditional Japanese tea ceremony techniques, providing a wholesome tea perfect for enhancing any part of your day. The powder can also be added to smoothies and juices, or as a natural ingredient to elevate the flavour and colour.

Directions ✧

To prepare traditional matcha tea, adjust the powder-to-water ratio according to your preferred consistency.

For a delicate thin tea, combine 1.75g of matcha with 75ml of hot water; for a richer thick tea, use 3.75g of matcha with 40ml of hot water.

Begin by sifting a small amount of matcha powder into your bowl with a bamboo spatula. Add water heated to 70°C, then whisk using a bamboo chasen in an 'M' motion until the mixture is smooth and uniform. Once a layer of foam forms, whisk at medium speed to create finer bubbles.

Once you have a good layer of bubbles on top, it is ready to be enjoyed.
