Please Note: Our miso is unpasteurised, and occasionally, customers may receive their jars with a little miso liquid seeping out. This does not affect the quality of the miso inside the jar at all.
This occurs as the live culture becomes active again if it encounters warmer temperatures during transit, which can reactivate the fermentation process. Gas is produced with fermentation, and as this builds, any liquid that has found its way into the rim of the jar can be pushed out as it escapes. We do not seal the jars airtight, as it is safer for this to happen (vs. the jar cracking under pressure). Reactivation of the culture during transit will not negatively affect the quality of the miso. Your jar may arrive a little sticky.
Please refrigerate the jar as soon as possible upon delivery to put the culture into a dormant state again.

This organic Japanese styled miso has been traditionally aged (fermented) in wooden vats fermented for at least a year, and includes 5 varieties of seaweeds, (Nori, Dulse, Kombu, Ulvaceae, Fucales), 3 varieties of organic mushrooms (shitake, reishi and maitake), that lend an oriental taste and flavour of the sea. Japanese style miso has functional qualities superior to any other miso.
All our miso has been produced according to an ancient traditional process using the highest quality organic certified ingredients. Some of the key steps in producing miso, sometimes forgotten or set aside by modern producers, are major components in our production process for providing top quality misos unique in the texture and rich taste they develop over time.

KEEP REFRIGERATED - BEFORE & AFTER OPENING
Our miso should be refrigerated as soon as you receive it to ensure the living miso culture remains dormant. The miso is fine to be unrefrigerated for the transit time however if the miso is left in the warmth of a kitchen, the living culture in the miso becomes active again producing gases and will continue the fermentation process of the miso - which will begin to change the taste and possibly over ferment.
We recommend keeping it refrigerated at all times once you receive your jar, as the miso has been aged to the perfect point in the production process.
