This delicious silver label (IGP certified) balsamic vinegar is produced in small batches by the Guerzoni family on their organic and biodynamic certified farm. They produced the only biodynamic-certified balsamic vinegar available in the world.
This silver label balsamic vinegar is produced from a precise blend of Modena (Lambrusco and Trebbiano) cooked grape must. The cooked grape must matures within the slow acidification derived from natural fermentation and progressive concentration in oak barrels, with no chemical or flavouring additives.
After prolonged boiling, made with the “open sky and direct fire” traditional method (mass production industry now use vacuum cooking that is much quicker, but leaves little flavour remaining in the grape must), the concentrated cooked must is removed from the boiler to be left to cool for at least 48 hours.
Then, the liquid is filtered and checked for taste and quality. After a rest in a special iron tank, the grape must is added with a small quantity of wine vinegar to start the “acidification process”, then it is put into natuarl wood barrels to begin the refining process. The years it spends in the oak kegs is what adds to the complex taste.
It is the slow acetic fermentation qualifies it as Traditional Modena Balsamic Vinegar, with it's slightly thick syrupy texture and the reason that absoultely no preservatives are needed.
