We are surrounded by 1,000s of acres of forest at our off-grid location in the Scottish Highlands and in late May the forest bursts into life with fresh, bright green buds. The area we pick from is very remote and accessible only by boat, or a very long hike through the mountains.

This weekend only: Wild-harvested from Sitka Spruce (Picea sitchensis) trees

Fresh pine sprigs have a much higher potency and aroma than the dried needles. They have been a traditional food and natural remedy for generations, and the bright green buds were gathered as one of spring’s first gifts after the long winter months. Valued as a nourishing source of vitality. 

As they are only available for a short time each year, we suggest putting the sprigs in water upon receipt to keep them fresh and storing them in the fridge, or freezing them to keep a larger amount for longer. 

Ingredients
  • Wild-harvested Sitka Spruce sprigs from the Scottish Highlands
  • Each sprig is a combination of fresh buds on the ends and older needles
  • Please note: we check the sprigs for little bugs, but do not wash the sprigs before sending them

No added fillers or preservatives. Picked from a remote area - inaccessible to cars and vehicles.

Directions

To make fresh pine needle tea:

  • Bring water to a boil and let cool a little.
  • Add pine needles (or whole sprigs) to water and reduce to the lowest heat. (approx 5 grams per cup depending on potency required / desired taste)
  • Very low simmer for 15 minutes and then remove from heat.
  • Either leave to cool a little then enjoy, or cover and let sit overnight to continue steeping
  • Serve hot or cold

Note: It's important to have a very low simmer to keep the tea tasting lighter and fresher

There are lots of really interesting and easy recipes available online for fresh pine tips:

  • Add to homemade pesto
  • Finely chop into sea salt to create an aromatic pine-infused finishing salt for roast vegetables and potatoes
  • Scatter over buttery mushrooms to brighten earthy flavours
  • Roast with asparagus and drizzle with a little balsamic before serving
