Our Organic Matcha is crafted exclusively from the tender top leaves of the first spring harvest — the most nutrient-rich flush of the year. For over 20 days before picking, the plants are shaded, a time-honoured practice that protects delicate amino acids, especially L-theanine, from converting into catechins (one source of tea's bitterness)
Deprived of direct sunlight, the tea leaves develop a natural sweetness and umami-rich flavour. Shading increases chlorophyll and amino acids, whilst decreasing polyphenol compounds to produce leaves of vibrant green with remarkable depth and minimal bitterness. It also elevates levels of dimethyl sulfide — the aromatic compound responsible for our Matcha’s distinctive, high-quality fragrance. The result is a vivid, velvety leaf, imbued with the deep “shaded aroma” prized in the finest teas
Picked and expertly processed
When tea plants are shaded, the leaves retain higher moisture content, making them more prone to oxidation once picked. The leaves must be tended and processed immediately after harvest. Once picked, the leaves are lightly steamed to preserve their vivid colour, then gently dried and de-stemmed, leaving only the silken leaf flesh. The slowest, most delicate part of the process then begins: grinding with a traditional stone mill. This is done at a deliberately unhurried pace to keep frictional heat extremely low, preserving the vibrant green hue, creamy texture, and layered aroma that defines true ceremonial-grade Matcha
A Journey That Spans Centuries and Mountains
Our search for this high grade organic Matcha began in Japan but led us to the semi-wild high-altitude gardens of the Yunnan–Guizhou Plateau in China — the original homeland of Camellia sinensis. Over 800 years ago, tea seeds from this very region travelled to Japan with the Zen priest Eisai, becoming the roots of Japanese tea culture and the matcha tea ceremony
Finding this special Matcha carried the story full circle. Our grower carries forward traditional cultivation methods while working in harmony with nature

Ceremonial Matcha
There are several grades of Matcha available. The finest Ceremonial-grade Matcha is best preserved for drinking pure: just add water
To prepare traditional matcha tea, adjust the powder-to-water ratio according to your preferred consistency. For a delicate thin tea, combine 1g of matcha with 75ml of hot water; for a richer tea, use up to 3.5g of matcha with 40ml of hot water
Please note:If you do not have a traditional bamboo chasen, you can use a normal small whisk. A handheld milk frother also can do a great job!
1. Begin by warming your bowl/cup with hot water |

2. Once warm, discard the hot water, and sift a small amount of matcha powder into your bowl/cup |

3. Add a very small amount of water heated to 70°C and mix to create a paste |

4. Add remaining 70°C water, and whisk using a bamboo chasen in an 'M' or zig-zag motion until smooth |

5. Continue whisking in a circular motion at medium speed to create fine bubbles on the surface. Once you have a good layer of bubbles on top (like the froth on a good cappuccino), it's ready to be savoured and enjoyed |
