What are IxCacao cacao drops?

Pure, unsweetened cacao in its most beautiful form

These exquisite, bite-sized drops are 100% pure cacao, without sugar and additives. They are the real cacao liquor: rich, dark, and beautifully fruity. Melt them into the most heart-warming hot chocolate, bake with them, or add them through your favourite recipes. If you love deep, intense dark cacao you can savour a drop on its own, but these are not a sweetened chocolate to snack on by the handful.

Made from highly prized, single-origin organic Hispaniola beans. Through careful fermentation and slow sun-drying, the cacao's natural bitterness is gently softened, allowing its complex, magical essence to shine through.

Are IxCacao drops sweet, or can you eat them like chocolate?

Our IxCacao Drops are made from just one ingredient: 100% pure cacao. Naturally unsweetened, they are crafted from the whole cacao bean to preserve its full depth of flavour.

On their own, they have a deep, rich flavour with a little bitterness. If you're expecting a sweet chocolate treat, these may come as a surprise.

Think of them as the starting point for chocolate rather than the finished confection. Melt them into a hot chocolate, blend them into smoothies or milkshakes for a delicious ice-cold chocolate drink, use for cooking and to make your own chocolate. If you enjoy very dark chocolate, you may also like a drop or two just as they are.

Pure cacao is a different experience altogether. Rich, satisfying and beautifully simple, it offers the true character of the cacao bean in its most natural form.

Is IxCacao a ceremonial cacao?

Many people would describe IxCacao as a ceremonial cacao. Although the term is now widely used, it is not a regulated or recognised grade of cacao. Instead, it has come to describe whole cacao prepared with exceptional care to preserve as much of its natural character as possible.

Unlike most cocoa products, ceremonial cacao is made from the whole bean, naturally retaining its cacao butter to create a rich, velvety cacao paste with a deep, complex flavour.

Our cacao is carefully fermented, dried, peeled and stone-ground using traditional methods, with nothing added and nothing removed.

In many ways, what is now called ceremonial cacao is simply the result of extraordinary care being given to every stage of growing, harvesting and processing. That same philosophy guides how we choose every producer we work with. Rather than chasing trends or relying on marketing terms, we look for growers and makers whose care and attention naturally create cacao of the highest standard.

How do you use cacao drops?

If you love intense, unsweetened dark cacao, these drops can be enjoyed just as they are, a little square of pure chocolate richness. For most people, though, they come into their own once melted into a drink, baked into a recipe, or sweetened to taste.

For an authentic hot chocolate, simply melt around 10 drops into warm milk. Sweeten gently with our Organic Rapadura for a deliciously uplifting cup of pure cacao goodness. Add a pinch of salt and chilli to bring out the flavours even more.

What is cacao paste (cacao liquor)?

Authentic Cacao

Cacao paste, also known as cocoa liquor or cocoa mass, is chocolate in its purest, most elegant form.

Each cacao pod holds rows of jewel-like beans, nestled in a sweet, fragrant pulp. After harvesting, the beans are carefully fermented, a vital step that awakens their flavour and softens the cacao's natural bitterness. The beans plump up and are then sun-dried to reduce their moisture content and lock in the cacao's richness and heady fragrance.

Roasting deepens the cacao's flavour, revealing the most exquisite chocolatey essence. The beans are then cracked to expose the nibs (the heart of cacao), and the nibs are stone-ground into a smooth, unadulterated paste known as cacao mass or liquor.

The paste is then poured into moulds to become the heavenly drops you'll find in your Na'vi pouch.

What's the difference between cacao and cocoa?

Cacao and cocoa both come from the same bean, Theobroma cacao. The difference is in how the bean is treated, and how the words are used. "Cacao" usually points to the bean kept close to its natural form: fermented, dried and stone-ground into pure paste, with nothing added, the way ours is. "Cocoa" more often describes the heavily processed, blended chocolate on supermarket shelves, where the cacao is mixed with sugar, milk solids or alkali (Dutch-processing) and much of its character is lost.
